Grilled Shrimp and Scallop Skewers with Lemon and Oregano

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 lb large sea scallops
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Soak eight wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  2. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper to make a marinade.
  3. Alternate threading the shrimp and scallops onto the skewers. Brush both sides of the skewers with the marinade.
  4. Heat your grill to high heat. Grease the grates and place the skewers on the grill.
  5. Grill the skewers for 2-3 minutes on each side, until the shrimp and scallops are lightly charred and cooked through.
  6. Serve the skewers hot, garnished with lemon wedges.
